 Blackened Deer Quesadillas

K...make your own blackening spice/rub

2 tbp paprika
1 Tsp garlic powder
1 tsp black pepper
1 tsp salt
1 tsp chili powder
1/2 tsp white pepper
1 tsp dried thyme
1/2 tsp cumin
1/2 tsp sugar

Get a good cut of deer, and DREDGE heavily in rub mix...let it sit for a bit then grill it on the BBQ, or in a pan if a BBQ isn't available..but we're all hunters, so we all have BBQ's right...lol..
Grill it until it's nice and charred and black..NOT BURNT!...let the rub blacken nicely.....should be done med rare inside....Med at best...
let it cool, then slice on a bias/angle, nice and thin...1/8" around.
Now get some avacado, roasted pepper, banana peppers, and some white aged cheddar...or whatever veg and cheeese you like
Throw your tortilla wrap on the grill, cover in cheese, then your veg, and finally your sliced blackened Deer...
Wait till it's all melting then fold in half, cut into 4 triangles and serve with chive sour cream and some babaganoush and enjoy.
Green tomato salsa is awesome with this too!

*Babaganoush is a spread kinda like hummus but made with eggplant and garlic!
I love eggplant so i love babaganoush...lol...

Sounds real good but I don't think the meat would make it to the BBQ. for the second round rofl.gif
All jokes aside though, it does look like it's a very simple rub to put together.

Oh yeah Ricoh...would work GREAT for Kittyfish and Chicken! AND GATOR!
You can add and omitt whatever you want for your own taste, but certain spices like paprika, chili powder... are integral to a blackening rub..or it won't blackend proper
You can make a JERK Blackening rub too, by adding some cinnimon, all spice, and a touch of clove..and some nutmeg..YUMM!
